This recipe makes 12 chocolate espresso single portion cakes, ENJOY.
2 espresso shots of ROSSO’s Maestro or Ricco capsules – Link
1 cup buttermilk
250g granulated sugar
¾ cups vegetable oil
250g all propose flour
2 eggs (beaten)
Pinch of salt
2 tbsp. brown sugar
1 tsp. vanilla extract
50g unsweetened cocoa powder
2 tsp. baking soda
1 tsp. backing powder
170g semisweet chocolate (chopped)
120 bittersweet chocolate (chopped)
½ cup whipping cream
* Preheat the oven to 350F.
* Mix the buttermilk, sugar, Maestro or Ricco coffee blend, salt and eggs on a medium speed, until well blended. In a separate bowl mix the flour, baking powder, baking soda and cocoa powder.
* Gradually mix the dry and wet mixtures together until smooth, mix in the semisweet chopped chocolate.
* Fill about 12 backing cups (paper cups or rimmed baking pan) up to about 2/3 height, bake for 30 minutes, and let the cakes cool completely on a wire rack.
* For the topping, melt the bittersweet chocolate with the cream on the lowest heat possible, constantly string, until well blended and dissolved.
* Let the chocolate topping cool for about 20 minutes and coat each cake generously.
* Serve after cakes have chilled for about 30 minutes.

Ingredients:
110g Sugar
60g Skimmed Milk Powder
550g milk (divided into 250g and 300g)
165g double/heavy cream (divided into 65g and 100g)
0.5g Xanthan
0.5g Locust Bean Gum
0.1g Kappa Carageenan
1g vanilla bean pulp
5g vanilla bean paste
*Thoroughly mix the sugar, xanthan, locust bean gum and carageenan together in a bowl with a whisk
*Pour 250g of milk and 65g of double cream into a pan.
*Add the sugar mixture to the pan and heat.
*Whisk to combine as the pan heats, and once it begins to simmer reduce the heat. It should nearly boil, and hold it there, whisking vigorously for 60 seconds.
*In a separate mixing bowl, or blender, combine the hot, thickened cream mixture with 60g of skimmed milk powder, the remaining 100g of cream and 300g of milk and the vanilla pulp and paste. Whisk/blend until completely combined.
*Chill in an ice bath.
*Churn in your ice cream machine.
*Once churned and ice cream, then transfer to a container and put in the freezer to further firm up.
*Make sure your serving vessel (cups/bowls etc) are frozen before use.
*Before scooping, allow to come to -10C.
*Per serving, allow approximately 50g of ice cream per single shot (16-20g) of liquid espresso
*Use one of our dark roast capsules, make espresso directly onto the ice cream in the frozen vessel.
*Serve immediately!

300g self-rising flour
4 eggs (beaten)
50g toasted & chopped walnuts
500g mascarpone
2 tbsp brown sugar
Cocoa powder (to decorate)
*Preheat the oven to 350F.
*Mix the butter and sugar together using the hand mixer, until you get a creamy mixture add the flour and eggs and keep mixing.
*Fold in the walnuts and one double shot of Rosso Caramello or Vanilla capsule (3 capsules), place half of the mixture in each baking pan and bake for about 30-minutes until risen and golden.
*Let the cakes cool down for a few minutes and place on wire rack, drip some espresso on the cakes and leave to fully cool down.
*Mix the mascarpone on the cake half, place the second on the like a sandwich, and coat the top with the remaining mascarpone.
*Sprinkle a generous amount of cocoa and serve!
